Roasted Beetroot Hummus
(Vegan, GF). Serves 6-8.
This lovely creamy beetroot hummus has a lovely texture, is packed with flavour, and provides plenty of polyphenols and prebiotic fibres to support a healthy happy gut. Additionally, this dip is high in plant-based protein and iron making it a virtual super food for vegetarians and vegans. A picnic and dinner party favourite this delicious dip is sure to be a crowd pleaser, even the kids will love it! your gut a lovely supportive boost, especially if eaten regularly. It’s super quick and easy to make, just needs a bit of setting time in the refrigerator before serving, ideally 1-2 hours.
Ingredients
2 medium sized beetroot (roasted and cooled)
1 ½ cups of cooked or canned chickpeas (drained, save some liquid in case the hummus is too thick)
Juice of 1 lemon (add more to taste if you like it lemony like me 😊)
1 Tablespoon of tahini (preferably unhulled)
1 teaspoon of sea salt
¼ cup of extra virgin olive oil
2 cloves of garlic – fresh crushed
1 teaspoon of wasabi paste (or ¼ teaspoon of wasabi powder), add gradually to find the flavour that best suits you, I like it quite spicy!
Method
1. Put all the ingredients except olive oil and wasabi into the food processor and blend on high until mixed but still a little chunky.
2. Turn the blender speed to low and slowly add the olive oil, and then the wasabi to suit your tastes.
3. Add any additional chickpea water, olive oil or lemon juice if the mix is too thick and not blending, or not tangy enough - go easy though it’s easy to put too much liquid in and end up with unappetising sloppy hummus.
4. Drizzle a little extra olive oil over the top and a sprinkle of finely chopped fresh parsley to serve. Keeps for 5-7 days in the refrigerator.
NOTE:
If you have kids who don’t like spice just add a tiny bit of wasabi powder and roast the garlic with the beetroot so it’s not so spicey. This recipe is high in FODMAPs and your healthy gut bugs will LOVE it! So if your tummy is inflamed and you can’t tolerate this recipe it’s best avoided until you have sought professional help to heal the underlying cause of the inflammation.
